Recipe Name:
Country Potato Pancakes
2 lb Potatoes; peeled, finely grated and drained
2 Eggs slightly beaten
1 tb Grated onion
2 tb Flour
1 ts Salt
1/2 ts Baking powder
Oil for frying

Combine all ingredients and fry in hot oil until browned on both sides, flattening as needed
Optional: Serve with applesauce or sour cream
